Light, moist, chocolatey green tea loaf, topped with delicious coconut frosting and tart fresh berries. I am sitting here typing this, knowing we cleaned up the last slices of this cake last night. 'NOOOO!!' I actually ate the last bites wanting to cry because I kid you not, this loaf is my favourite treat recipe to date! Coming home from a long day on placement and settling onto the couch with a slice of this is the best!! Chocolate and matcha is my few favourite combo, and you just have to give this a go!

Making gingerbread men has become a bit of a Christmas tradition for me, and each year I like to change it up a bit, this time I've ditched the gluten (for the coeliac and gluten intolerant folks) by substituting regular flour for teff flour, a gluten free grain originating from Africa. These guys are also low in sugar (refined sugar free), vegan (and therefore dairy free), and totally tasty!
