Balinese Dragon Smoothie

Okay, so I have been making and snapping this smoothie on my snapchat and Instagram story loads over the past few weeks, many of you have requested a recipe for it so I thought I would put it up on my blog for you all so you can share this pure bliss with me. This smoothie has been my go to smoothie every morning here in Bali! Lauren and I have been making it every day after a big gym sesh! And when I don’t get to have it I get withdrawals, seriously.

 

Dragon fruit may seem like a strange tropical fruit that you don’t know what to do with it. It comes in a few different varieties; fact- it is actually the fruit of a plant from the cactus family! The deep pink inside is my favourite! Its colour is insane, it actually stains my fingers pink- so be careful when prepping. In Bali dragon fruit (aka pitaya) is so so cheap and abundant (like 50 cents each). I have eaten at least 1 of these fruits each day. Dragon fruit is so tasty and the texture is perfect for smoothies. It is low in sugar and high in fibre- reallllly good for digestion. The deep pink colour of the flesh disguises any greens in this smoothie, actually the greens and dragon fruit create a purple hue.

 

Dragon fruit is also grown here in Australia in the summer months, however it’s still pretty expensive, I was paying around $5AUD per dragon fruit in Australia, (yep I am addicted so I couldn’t resist!) and it’s even more expensive when going out of season. So when in season, I recommend buying a heap and freezing it for smoothies!

Makes 2-3 serves

 

Ingredients:

 

2-3 bananas, frozen

1 red dragonfruit, frozen

2 handfuls ice cubes

1 cup baby spinach

½ tsp spirulina powder

1 tbsp raw cashews

1 tbsp natural peanut butter

1 tbsp cacao powder

½ cup coconut water

½ cup almond milk 

 

For topping:

1 tbsp cacao nibs

1 tbsp shredded coconut

 

 

How to make:

1.     Add all of the smoothie ingredients to a high powered blender. 

2.     Blend on high until smooth and creamy. Texture should be thick enough to stick to a spoon upside down but runny enough to get through a wide straw.

3.     Pour smoothie into jars or tumblers. 

4.     Top each with cacao nibs and coconut. 

5.     Dig in with a spoon and straw. 

 

Or turn it into a bowl:

1.     Make smooth as directed above.

2.     Pour into bowls.

3.     Top with cacao nibs, shredded coconut, seeds, and fresh sliced dragon fruit.
