My name is Ellie, or as most may know me, Elsa! I am a 27 year old qualified Nutritionist and Dietitian based on the Gold Coast, Australia. I create wholesome recipes and share photography from my everyday life on Instagram.
I also love to blog about all things health, travel and lifestyle. Currently I live on the Gold Coast, Australia with my husband, Alex, pup Oatly, and newly baby Bowie. I have published 2 plant based cookbooks in Australia and both can be found in Australian stores and online. They are both Australian Bestsellers.
My husband and I also founded our online store, The Wholesome Store in December 2017. We sell curated lifestyle, fashion and kitchen goods.

This delicious tray of saucy jackfruit loaded nachos is a favourite in our home. We always make this on the baking tray and sit down to eat it together or with friends - straight from the tray! The recipe is based off of the jackfruit nachos from my second cookbook - The Global Vegan, only we have served it on the tray, we use a cheats vegan sour cream, and a fresh salsa on top! I have been wandering the pasta aisle of my supermarket pondering new pasta recipes as my pregnancy sure has me craving pasta! I found these giant shells called βconchiglioniβ and I wanted to create something a little bit different. I have also been craving cannelloni and spinach and feta triangles so I wanted to marry the 3 with this βSpinach Ricotta Stuffed Shellsβ baked pasta dish! This recipe is sure to be a new favourite in your go-to recipes. Packed with protein, carbohydrates, B vitamins, healthy fats, Vitamin C, PLUS iron! This dish is not only delicious but nutritious as well!
This wholesome fruit and nut loaf is best served warm with a big smear of nut butter or vegan butter. Personally I love it with macadamia butter as its so creamy and delicious. It would also make for a super yummy breakfast served with some coconut yoghurt and fresh berries or figs.
This delicious spring inspired recipe is the perfect light meal as the weather warms up and salads appear in your daily routine. With warm elements such as the baked pumpkin and crispy chickpeas and cool fresh lemon macadamia butter and feta to marry winter and summer.
I developed this recipe for Aus Macadamias, to celebrate the blossoming of the macadamias in Spring. We even got to shoot these recipes in a blossoming orchard in Alexs hometown, Alstonville. The smell of the flowering trees is just beautiful and if you have the chance to visit an orchard I highly recommend it.

These protein balls are soo delicious! My favourite snack to prep so I have a healthy treat ready to go if I want a little chocolate-y goodness after dinner or during the day. Theyβre high in plant proteins from our protein blends.
I am totally loving this salad recipe right now. It is really filling, full of flavour, and so easy to make. The addition of the spiced chickpeas on top gives it a big plant protein hit. Eat it on its own or serve this along-side some veggie patties, tempeh strips or if your not vegan/veggie - some eggs or seafood/meat.

2019 here we are!! First up on my blog this year I want to share with you my Vegan Fried Egg recipe that I shared on my YouTube channel late last year. The response to this video was INSANE!! Itβs now amassed over 260,000 views. Something I did not expect. It was featured in articles, news channels and instagram accounts. I realised I forgot to write down the recipe for my viewers so that they could easily access the recipe over and over again without having to rewatch the whole tutorial hence I am sharing here the written recipe. Not only is this recipe just a fun science experiment in the kitchen but also fun for vegans who do miss the classic βeggs on toastβ or the many children who suffer from egg allergies.
I wanted to create this dish thatβs inspired by my last Christmas, wintery ingredients, pumpkin spice lattes, Christmas cake, Christmas light shows and ice skating. Since Christmas is a pretty overindulgent time of the year, I have kept this recipe super healthy, and also tried to prevent as much waste as possible by utilising ingredients that would otherwise be discarded. A great dish to cook and share with your family! I hope this dish brings you joy this Christmas.
This 5 Minute Vegan Keto (βVETOβ) Overnight Bircher is another recipe that has been on repeat for a couple of months in our household. It is my absolute FAVOURITE healthy breakfast at the moment. Super quick, super healthy, super filling, and sooo yummy. It has now been 4 very short months since our wedding day! Last year was the best year of our lives, the planning and preparation, to our wedding day and honeymoon. They say itβs the best day of your life and it sure is that.
